APPLE CAKE WITH QUINCE FILLING

Ingredients:
  • Ingredients for the sponge cake
  • 250 g plain flour.
  • 220 g sugar.
  • 120 g butter (can be replaced with sunflower oil or margarine).
  • 3 eggs.
  • 3 or 4 medium apples, peeled and in 3 mm slices (approx.).
  • One sachet baking powder or 18 g bicarbonate.
  • A pinch of salt.
  • Optional: a teaspoonful of essence of orange blossom or lemon peel.
  • Ingredients for the filling:
  • 150 g approx. Valliser quince sliced into thin fillets.
Preparation:

Sponge cake preparation

Grease a baking tin (approx. 28 cm diameter) and set the oven to 180º.

Next, beat the eggs with the sugar in a bowl until the mixture is whitish in colour.

Add the warm butter and keep beating.

Next, add the flour little by little, beating continuously, through a sieve or strainer. This is to avoid possible lumps in the liquid.

Lastly, add the essence of orange blossom or lemon peel and baking powder, all the while continuing to beat.

Pour the mixture into the tin. Place the pieces of apple on top in the pattern of your choosing. Place the tin in the preheated oven for about 30 minutes. It is ready if a toothpick can be inserted and removed without traces.

Let the cake cool on the kitchen counter. Cover with a cloth.

Filling preparation

Once the sponge cake has cooled down, slice it in half using a long knife of the confectioner's knife variety.

Then, fillet the Valliser quince and place the pieces on the lower section of the cake.

Lastly, put the top of the sponge cake back in place, making sure to remove excess quince filling from the sides using a knife. This will make the cake more homogeneous and eye-catching.

Now, all that is left is to enjoy it with a cup of tea, cup of white coffee or whatever you choose, BUT in company!
