SLICE OF OMELETTE WITH CHEESE & QUINCE

Ingredients:
  • 2 large, thin omelettes.
  • 100 g cheese (personal preference) in long strips, 1cm wide.
  • 100 g cheese (personal preference) in thin slices.
  • 100 g Valliser quince cut into thin slices.
  • 100 g Valliser quince cut into long strips, 1 cm wide.
  • Toothpicks to hold everything together.
Preparation:

The omelettes are prepared similarly to crêpes (round and thin) and, whencooked, placed on the worktop. Cover the surface of one of them with the thin slices of quince and, then, add the cheese cut into a long strip. Roll the omelette up.

Then, the same thing with the other omelette. This time the slices of cheese and strip of quince are added. Roll the omelette up to create a type of omelette cannelloni.

Lastly, cut the cannelloni into five or six pieces, as preferred, and then spear with a toothpick to join the two types of omelette. This way the toothpick is invisible and the pieces are joined in pairs.

Note:

It can be presented in geometrical shapes, being both striking and original at the same time.
