  • 6 large eggs.
  • 125 g sugar.
  • 150 g sugar (for the caramel).
  • 200 g Valliser quince.
  • Grated lemon peel.
  • Cinnamon stick.

Prepare the caramel in a suitably large pan (to be used later to heat the milk with theother ingredients). Put the sugar to be burnt in it and then place on medium heat. Keep stirring until obtaining the desired caramel, then put into the moulds.

Then, slice the Valliser quince thinly and place in a circle (the same size as the base of the mould). Place the quince slices on top of the caramel.

In the pan where the caramel was prepared, add milk to 15 g sugar, the cinnamon stick and the lemon peel. Place on a low heat to warm it.

Taste and add sugar as needed.

Leave to warm up on a low heat. Now, beat the eggs in another bowl.

Take off the burner and let it stand for 5 minutes.

After this, add the eggs. Stir continuously.

Fill the moulds with the mixture and place them on an oven tray. Fill the tray with water to half way up the moulds.

Leave the flans in the oven for about 35 minutes. After 25 minutes, check to see if they are ready. If the toothpick comes out clean, they are ready. If not, then let them cook for a little longer.


The result of this recipe is a flan that, once turned over, has a charming touch with the quince now resting on top. This flan is very visual and tastes truly special.
